Ingredients
Dipping Sauce :
- Oil:1 tsp
- Onion (Finely Chopped):1
- Garlic Cloves:2
- Finely Chopped Ginger:2
- Beef Mince:250grams
- Potato( peeled, finely chopped):1
- Peas:1/2 cup
- Curry Powder:2 tbsp
- Chopped Coriander:1/2 cup
- Puff Pastry:4 sheets
Dipping Sauce :
- Rice Vinegar:1/2 cup
- Water:1/2 cup
- Caster Sugar:1/2 cup
Methods
- To make the dipping sauce, combine the vinegar, water and sugar in a saucepan over low heat. Cook, stirring, until the syrup thickens. Cool. Transfer to a bowl. Add the cucumber and chilli and combine. Cover and place in the fridge for 1 hour to chill.
- Meanwhile, heat the oil in a frying pan. Add the onion, garlic and ginger and cook, until the onion is soft. Add the mince and cook, until it changes colour. Add the potato and cook, until just soft. Add the peas and curry powder and set aside for 30 minutes to cool. Add the coriander, salt and pepper. Use a round pastry cutter to cut discs from each pastry sheet. Place 2 teaspoons of the beef mixture in the center of each disc. Brush edges with water and fold in half to enclose filling. Pinch edges together to seal. Heat the oil and deep-fry until puffed and golden. Use a slotted spoon to transfer to a plate lined with paper towel. Arrange the curry puffs on a serving platter and serve with dipping sauce.
