Ingredients
  1. Kidney:4(boiled)
  2. Brain:2(boiled)
  3. Mutton chops:0.25 kg or 1/2 kg
  4. Onion:2 (medium)
  5. Green chillies:5
  6. Tomatoes:4
  7. fenugreek leaves:1tbs (crushed)
  8. Garlic:4 oz
  9. Ginger:1 inch piece
  10. bouquet garni prepared:3tbs
  11. ghee:1/4cup
  12. salt:1/2tsp
  13. coriander leaves:1/2 bunch
  14. chilly powder:2tbs
  15. Curd :1/2 cup
Bouquet garni used in Kat-a-Kat:
  1. Aniseeds:1/4 cup
  2. Cardamom big:1/4 cup
  3. Cardamom small:16-18
  4. White poppy seeds:1/2 cup
  5. Cumin seeds:2 1/2cup
  6. Long:1/4cup
  7. Grounded mace:1/4cup
  8. Black pepper:1/4cup
  9. Grounded cinnamon:1/4cup
  10. Whole coriander:3/4cup
  11. coriander powder: 1/2cup
  12. cobnut  powder:1cup leveled

Methods
On a pan, put some garlic, cut up the kidney chops. keep on cutting up constantly till small pieces made, than add garlic, put onions finely out, finely chopped tomatoes, ginger slices, a green chillies, than add salt+ chilly powder than add in the brain and in sprinkle garlic and keep doing kat-a-kat  the 2 special spoons, coriander leaves, ghee curd+ saute well by doing kat-a-kat. Lastly sprinkle prepared bouquet garni, fenugreek leaves + some more chopped coriander leaves. Keep doing kat-a-kat till every thing has become tender.
BOUQUET GARNI USED IN KAT-A-KAT
Clean + grind all these ingredients to a fine powder,if this powder left keep it in a air tight bottle in the fridge.
